CREAMY PESTO PENNE

INGREDIENTS
  • 1 12 ounce package organic penne pasta
  • 1 cup firmly packed organic fresh basil leaves
  • 1/2 cup fancy shredded Italian style Parmesan cheese divided
  • 1/3 cup pine nuts toasted, divided
  • 2 cloves garlic
  • 1/8 teaspoon sea salt
  • 1/4 cup organic extra virgin olive oil
  • 1/4 cup organic half & half
  • 1 medium tomato seeded and diced

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in food processor or blender, combine basil, ¼ cup Parmesan cheese, 3 tablespoons pine nuts, garlic and salt. Blend until it forms a paste. With machine running, slowly add olive oil. Continue blending until well combined.

Toss pasta with ½ cup pesto, half and half and tomato. Add additional pesto, if desired. Salt and pepper to taste. Garnish with remaining Parmesan cheese and pine nuts.
