CREAMY CAJUN PASTA

INGREDIENTS
  • 1/2 12 ounce package organic whole wheat penne
  • 1 tablespoon organic extra virgin olive oil
  • 1/2 cup red onion sliced, halved
  • 1/2 cup red bell pepper sliced, halved
  • 1/2 cup yellow bell pepper sliced, halved
  • 1/2 cup green bell pepper sliced, halved
  • 1 Serrano chile seeded and finely diced
  • 1 8 ounce package button mushrooms quartered
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon minced garlic
  • 1 10 ounce container refrigerated light Alfredo sauce
  • 1 medium tomato seeded and diced

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat oil over medium-high heat. Add onions, bell peppers, and Serrano chile; sauté until tender (about 5-7 minutes).

Add mushrooms, Cajun seasoning and garlic; continue sautéing until mushrooms are softened (about 5 minutes). Note: Cajun spice level may need to be adjusted based on brand of Cajun seasoning blend used. Stir in Alfredo sauce; heat through. Salt to taste.

Toss pasta and tomatoes with Cajun sauce.

Transfer to serving platter and garnish with Parmesan cheese and chopped parsley, if desired.
