
LINGUINE & CLAMS



INGREDIENTS
- 1 16 ounce package linguine
- 1/4 cup Culinary Circle Extra Virgin Olive Oil
- 1 cup chopped onion
- 2 tablespoons chopped garlic
- 1/2 cup dry white wine
- 1 teaspoon red pepper flakes
- 3 pounds littleneck clams scrubbed clean
- 2 medium tomatoes chopped
- 1/4 cup chopped fresh Italian parsley
- - fancy shredded Italian style Parmesan cheese optional
DIRECTIONS
Prepare pasta according to package directions; drain, but do not rinse. Return to pan.
Meanwhile, in large saucepan with cover or Dutch oven, heat oil over medium-high heat. Add onions and garlic; salt and pepper to taste. Sauté until onions are softened.
Add clams, wine and red pepper flakes; cover and simmer until most of the clams have opened (about 6-8 minutes).
