GLUTEN FREE LIGHTENED UP BAKED MACARONI & CHEESE

INGREDIENTS
  • 12 ounces gluten free brown rice elbow macaroni
  • 1 12 ounce can evaporated skim milk
  • 4 ounces Neufchatel cheese softened, cubed
  • 2 cups 2% milk reduced fat shredded Cheddar cheese divided
  • 1/2 cup fat free cottage cheese

DIRECTIONS

Prepare pasta according to package directions. Drain.

Meanwhile, in food processor or blender, combine milk, neufchâtel, 1½ cups Cheddar and cottage cheese; salt and pepper to taste. Process until smooth.

Toss pasta with sauce and transfer to a greased 2-quart baking dish; top with remaining Cheddar cheese. Bake in a preheated 375°F oven 20-25 minutes or until bubbly and golden brown.
