
FRIED PASTA
with Sausage & Spinach



INGREDIENTS
- 1/2 16 ounce package linguine
- 3 tablespoons 100% pure olive oil divided
- 1/2 cup thinly sliced sweet onion
- 1/2 cup red bell pepper thinly sliced
- 1/8 teaspoon red pepper flakes
- 8 ounces smoked Andouille sausage sliced
- 1/2 5 ounce package fresh baby spinach leaves
- 3/4 cup half & half
- 1/2 cup fancy shredded Italian style Parmesan cheese
DIRECTIONS
Prepare pasta according to package directions; drain.
Meanwhile, in large skillet, heat 1 tablespoon olive oil over medium-high heat. Add onions, bell pepper and red pepper flakes; salt and pepper to taste. Saute until onions begin to caramelize (about 8-10 minutes). Remove to a plate; keep warm.
Add sausage to skillet; sauté until slightly browned and heated through. Transfer to plate.
Add remaining 2 tablespoons olive oil to skillet. When hot, add pasta; toss to coat with oil. Cook pasta until browning begins, turning occasionally (about 5 minutes).
Add onions, peppers and sausage back to skillet; add spinach. Continue sautéing until spinach is wilted. Add in half & half and cheese; stir to coat.
