
CREAMY SAUSAGE, ARTICHOKE & MUSHROOM PASTA



INGREDIENTS
- 1 16 ounce package penne rigate
- 1 16 ounce chub pork sausage
- 7 ounces shiitake mushrooms stems removed, sliced
- 1/2 cup chopped onion
- 1/4 teaspoon red pepper flakes
- 1 14 ounce can medium whole artichoke hearts drained, cut in half
- 1 cup half & half
- 1/2 cup fancy shredded Italian style Parmesan cheese
DIRECTIONS
Cook pasta according to package directions; drain. Meanwhile, in large skillet, cook and crumble sausage until cooked through; remove to clean paper towels to drain.
Add mushrooms, onions and red pepper flakes to skillet; salt and pepper to taste. Sauté until mushrooms are slightly browned. Stir in artichokes, half & half and cheese; simmer until slightly thickened.
Add cooked pasta and sausage to skillet; toss to coat. Continue simmering until heated through.
