CREAMY SAUSAGE, ARTICHOKE & MUSHROOM PASTA

INGREDIENTS
  • 1 16 ounce package penne rigate
  • 1 16 ounce chub pork sausage
  • 7 ounces shiitake mushrooms stems removed, sliced
  • 1/2 cup chopped onion
  • 1/4 teaspoon red pepper flakes
  • 1 14 ounce can medium whole artichoke hearts drained, cut in half
  • 1 cup half & half
  • 1/2 cup fancy shredded Italian style Parmesan cheese

DIRECTIONS

Cook pasta according to package directions; drain. Meanwhile, in large skillet, cook and crumble sausage until cooked through; remove to clean paper towels to drain.

Add mushrooms, onions and red pepper flakes to skillet; salt and pepper to taste. Sauté until mushrooms are slightly browned. Stir in artichokes, half & half and cheese; simmer until slightly thickened.

Add cooked pasta and sausage to skillet; toss to coat. Continue simmering until heated through.
