GRILLED SHRIMP

over Angel Hair & Garlic Cream Sauce

INGREDIENTS
  • 1/2 cup butter
  • 2 tablespoons minced garlic
  • 2 tablespoons minced shallots
  • 1/8 teaspoon Old Bay® seasoning
  • 1/2 cup white wine
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh chives
  • 1 pound frozen 16-20 count EZ peel uncooked shrimp thawed, peeled and deveined
  • 4 bamboo skewers soaked in water 30 minutes
  • 8 ounces angel hair pasta
  • 1 medium tomato seeded and diced
  • - Culinary Circle Shredded Parmesan Cheese

DIRECTIONS

In medium saucepan, melt butter over medium heat. Add in garlic, shallots and Old Bay. Season with salt and pepper to taste. Sauté 1 minute.

Add in wine; bring to a simmer. Simmer, stirring occasionally, until reduced by half. Add in cream and chives; continue simmering until sauce has thickened slightly (about 1 minute). Set aside and keep warm.

Meanwhile, prepare grill to medium heat. Place shrimp on skewers. Prepare pasta according to package directions; drain.

Meanwhile, place shrimp on grill; grill, turning occasionally until opaque in color and cooked through (about 8-10 minutes). About halfway through grilling, start brushing shrimp occasionally with a small amount of the garlic cream sauce.

Toss pasta with remaining sauce and tomatoes. Serve shrimp over pasta; sprinkle with Parmesan cheese.
