GLUTEN FREE MINI CORN DOGS

INGREDIENTS
  • 1 cup yellow cornmeal
  • 1 cup gluten free all-purpose baking flour sifted
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup honey
  • 2 tablespoons pure vegetable oil
  • 1 large egg beaten
  • 1 16 ounce package little wieners drained and dried

DIRECTIONS

In large bowl, combine corn meal, flour, baking powder and salt. In medium bowl, whisk together buttermilk, honey, oil and egg; whisk into flour mixture. Let stand 10 minutes.

Pour enough vegetable oil into a Dutch oven or large saucepan to reach a depth of 2 inches. Heat oil over medium-high heat until oil reaches 375°F on a deep fry thermometer.

In batches, dip wieners in batter; carefully place in hot oil. Fry, turning occasionally, until golden brown (about 2-3 minutes). Remove from oil with slotted spoon and drain on paper towels. Repeat with remaining wieners. Serve hot with ketchup and mustard.
