MAPLE PECAN SALMON

Serves : 4 servings

INGREDIENTS
  • 2 cups maple pecan flakes & clusters cereal
  • 4 (4 ounce) salmon fillets skin removed
  • 1 tablespoon organic extra virgin olive oil
  • 1/4 teaspoon freshly ground sea salt
  • 1/4 teaspoon organic ground black pepper
  • 1 cup organic mild mango peach salsa

DIRECTIONS

Place crushed cereal in a shallow dish. Brush both sides of salmon fillets with olive oil; sprinkle with salt and pepper. Coat salmon with cereal.

Place on a baking sheet that has been lined with aluminum foil. Bake in a preheated 375°F over 20 minutes or until fish flakes easily with a fork.

Serve salmon topped with salsa.
