
PESTO CRUSTED HALIBUT
with Wasabi Mashed Potatoes



INGREDIENTS
- 1/2 cup crispy Panko style plain bread crumbs
- 1/4 cup traditional basil pesto sauce & spread
- 1 pound halibut fillets skin removed
- 1 tablespoon olive oil
- 1 24 ounce package refrigerated creamy mashed potatoes
- 1 tablespoon creamy wasabi horseradish
- 3/4 cup French fried onions
DIRECTIONS
In small bowl, combine bread crumbs and pesto; set aside. Pat fish dry with clean paper towels. Press pesto mixture onto both sides of fish.
In large skillet, heat oil over medium heat. Gently add fish to pan. Cook, turning once, until fish flakes easily with a fork (about 10 minutes per inch of thickness).
Meanwhile, transfer potatoes to a microwaveable dish. Mix in wasabi horseradish. Microwave according to package directions.
In small skillet, heat fried onions over medium heat until golden brown.
To serve, place a serving of mashed potatoes on plate, top with halibut fillets and fried onions.
