
CRAB STUFFED FLOUNDER



INGREDIENTS
- 1/4 cup butter divided
- 1/4 cup diced yellow onion
- 1/4 cup diced celery
- 1 tablespoon minced garlic
- 1/4 teaspoon ground black pepper
- 1 8 ounce package flake style imitation crab meat thawed, chopped
- 20 saltine crackers crushed
- 1 large egg beaten
- 2 tablespoons half & half
- 1 teaspoon Old Bay® seasoning
- 1 pound flounder fillets
DIRECTIONS
In medium skillet, heat 2 tablespoons butter over medium-high heat. Add onion, celery, garlic and pepper; sauté until softened (about 3-5 minutes).
Transfer to a food processor or blender. Add crabmeat, crackers, egg, half & half and Old Bay seasoning; pulse until finely chopped and it comes together. Melt remaining 2 tablespoons butter.
Brush baking sheet with butter; place fillets on baking sheet; lightly brush fillets with butter and sprinkle with additional Old Bay seasoning. Spoon crab stuffing over fillets; brush remaining butter over stuffing and sprinkle with additional Old Bay seasoning.
Bake in a preheated 425°F oven 10-12 minutes or until fish flakes easily with a folk and stuffing is cooked through and lightly browned.
