MEATBALLS

with Mushroom Gravy

INGREDIENTS
  • 1 6.8 ounce package beef flavored rice mix
  • 1 pound extra lean ground beef
  • 1 large egg
  • 1 tablespoon 100% pure olive oil
  • 1 8 ounce package sliced button mushrooms
  • 1 can beef broth
  • 1 10.5 ounce can 98% fat free cream of mushroom Soup

DIRECTIONS

Using only half of the seasoning packet, prepare rice according to package directions. Allow rice to cool slightly.

In large bowl, combine beef, ¾ cup prepared rice and egg; mix until just combined. Form into 20-24 (1½-inch) meatballs. Place meatballs on a greased baking sheet. Bake in a preheated 375°F oven 15 minutes or until cooked through.

Meanwhile, in large skillet, heat oil over medium-high heat. Add mushrooms and sauté until softened, stirring occasionally. Stir in broth, soup and remaining half of seasoning packet.

Add remaining rice and bring to a boil; reduce heat and simmer 5 minutes. Add meatballs and toss to coat.
