MASHED POTATO STUFFED MEATLOAF

with Bacon & Cheese

INGREDIENTS
  • 1 3.8 ounce pouch loaded mashed potatoes
  • 2 pounds ground meatloaf mixture - beef, pork
  • 2 cups shredded mild Cheddar cheese
  • 1/2 cup crispy Panko style plain bread crumbs
  • 1/2 cup chopped onion
  • 2 large eggs beaten
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 9 slices bacon

DIRECTIONS

Prepare mashed potatoes according to package directions; set aside.

In large mixing bowl, combine next 7 ingredients; salt and pepper to taste. Mix until just combined.

In a greased 13x9-inch baking dish, form half the mixture into a 10x4-inch loaf. Top with mashed potatoes; form remaining mixture over potatoes, sealing meat together. Lay with bacon.

Bake in a preheated 425°F oven 50-55 minutes or until internal temperature reaches 160°F.
