ITALIAN MEATLOAF

Serves : 6 servings

INGREDIENTS
  • 1 1/2 pounds ground meatloaf mixture - beef, pork
  • 1 14.5 ounce can diced tomatoes with oregano, garlic & basil drained
  • 1 1/2 cups chopped fresh spinach leaves
  • 1 cup crispy Panko style plain bread crumbs
  • 1/2 cup chopped onion
  • 2 large eggs beaten
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2 cups shredded mozzarella cheese divided

DIRECTIONS

In large bowl, combine all ingredients and 1 cup cheese; salt and pepper to taste.

Transfer to a greased 9x5-inch loaf pan. Bake in a preheated 375°F oven 45 minutes.

Top with remaining 1 cup cheese and continue baking 10-15 minutes or until internal temperature reaches 160°F and cheese is melted.
