CORN BREAD MEATLOAF

Serves : 8 servings

INGREDIENTS
  • 1 6 ounce package corn bread stuffing mix
  • 2 pounds lean ground beef
  • 1 1/2 cups thick and chunky salsa divided
  • 1 4 ounce can diced green chiles drained
  • 2 large eggs
  • 1/2 cup chopped onion
  • 1/2 teaspoon garlic powder

DIRECTIONS

Prepare stuffing according to package directions.

Meanwhile, in large mixing bowl, combine beef, ½ cup salsa, chiles, eggs, onions and garlic powder. Add prepared stuffing; mix until just combined.

Transfer to a greased 9x5-inch loaf pan. Bake in a preheated 375°F oven 1 hour.

Top with remaining salsa; continue baking 15 minutes or until internal temperature reaches 160°F.
