
MEXICAN CASSEROLE II



INGREDIENTS
- 1 pound lean ground beef
- 1 cup chopped yellow onion
- 1 9.75 ounce package taco dinner kit divided
- 3/4 cup water
- 1 15.25 ounce can whole kernel corn drained
- 1 4 ounce can diced green chiles
- 1 package shredded colby jack cheese
- 1 medium tomato seeded, chopped
- 3 green onions sliced
- 1 2.25 ounce can sliced black olives
DIRECTIONS
In large skillet cook and crumble beef and onions until beef is browned; drain. Stir in taco seasoning from taco kit and water. Cook over low heat for 2-3 minutes.
Add taco sauce from taco kit, corn and green chiles. Break taco shells from taco kit into chip size pieces. Layer 1/3 broken taco shells in greased 13x9-inch baking dish. Layer half of beef mixture and half of cheese over shells. Continue layering with another 1/3 of taco shells, remaining beef and cheese.
Bake in a preheated 350°F oven for 20 minutes. Layer with remaining shells, tomatoes, green onions and black olives; continue baking for 5 minutes.
Serve with sour cream and salsa, if desired.
