FRESH FRUIT BRUSCHETTA

INGREDIENTS
  • 1 fresh white peach chopped (about 1 cup)
  • 1 fresh yellow nectarine chopped (about 1 cup)
  • 1 cup chopped fresh pineapple
  • 1 cup fresh raspberries
  • 1 kiwi peeled, chopped
  • 2 tablespoons chopped fresh mint leaves
  • 1 teaspoon granulated sugar
  • 10 slices chunky cinnamon bread cut in half diagonally
  • 2 tablespoons melted butter

DIRECTIONS

In medium bowl, combine peaches, nectarine, pineapple, raspberries, kiwi, mint and sugar; set aside.

Lightly brush both sides of bread with butter. Place on a baking sheet. Bake in a preheated 400°F oven 5 minutes; turn and continue baking 5 minutes or until golden brown. Remove from oven; cool.

Serve cinnamon toast points with fruit.
