FROZEN RASPBERRY CHEESECAKE

Serves : 8 servings

INGREDIENTS
  • 1 8 ounce package Neufchatel cheese softened
  • 1/2 cup sweetened condensed milk
  • 1/4 cup light sour cream
  • 2 tablespoons lemon juice
  • 1 9-inch graham cracker pie crust
  • 1/2 1.5 quart container fat free raspberry sherbet softened

DIRECTIONS

In medium bowl, combine cream cheese, milk, sour cream and lemon juice. Using an electric mixer on medium speed, beat until light and fluffy (about 2 minutes).

Spread into the bottom of graham cracker crust. Freeze for 2 hours or until firm.

Spread sherbet over frozen cream cheese layer. Freeze for an additional 2 hours or until firm.

Remove from freezer about 10 minutes before serving.
