MINI CHERRY CHEESECAKES

INGREDIENTS
  • 18 paper muffin liners
  • 18 vanilla wafers
  • 2 8 ounce packages Neufchatel cheese softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 20 ounce can cherry pie filling

DIRECTIONS

Line 2 (12 count) muffin pans with 18 paper liners; place a vanilla wafer in bottom of each liner; set aside.

In large mixing bowl, combine Neufchâtel and sugar; using an electric mixer, beat on medium speed until light and fluffy; scraping edge of bowl. Slowly add eggs, one at a time, scraping edge of bowl between each egg.

Fill paper liners with mixture. Bake in a preheated 350°F oven 15 minutes. Remove from oven and place on cooling rack; cool 30 minutes.

Refrigerated, uncovered, until thoroughly chilled, at least 2 hours. Top with pie filling just before serving.
