MARGARITA CAKE

INGREDIENTS
  • 1 15.25 ounce package lemon deluxe cake mix
  • 1 10 ounce can frozen margarita mix thawed, divided
  • 3/4 cup + 2 tablespoons lemon-lime soda divided
  • 1/4 cup pure vegetable oil
  • 3 large eggs
  • 1 cup powdered sugar
  • 2 tablespoons frozen limeade concentrate thawed

DIRECTIONS

In large mixing bowl, combine cake mix, 1 cup margarita mix, ¾ cup soda, oil and eggs. Using an electric mixer on medium speed, beat 2 minutes.

Transfer to a greased Bundt® pan. Bake in a preheated 350° F oven 40-45 minutes or until a knife inserted in center comes out clean.

Remove cake from oven and allow to cool in pan 10 minutes.

Meanwhile, in small bowl combine sugar, remaining margarita mix, remaining 2 tablespoons soda and limeade; set aside. Remove cake from pan and poke all over with fork. Pour margarita glaze over warm cake.
