KEY LIME PIE II

INGREDIENTS
  • 1 9-inch graham cracker pie crust
  • 3 large egg yolks
  • 2 14 ounce can sweetened condensed milk
  • 1 cup key lime or lime juice
  • 1 cup whipping cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pure vanilla extract

DIRECTIONS

Place pie crust on medium baking sheet; set aside. Place egg yolks in large bowl; using an electric mixer on high, beat egg yolks until light and fluffy.

Reduce speed to medium; gradually add condensed milk. Beat until thickened (about 2 minutes). Reduce speed to low; slowly add lime juice until just combined.

Transfer to pie crust (crust will be very full). Bake in a preheated 350°F oven until filling is set (about 15 minutes). Remove from oven; allow to cool completely. Refrigerate until ready to serve.

In medium bowl, combine whipping cream, sugar and vanilla. Using an electric mixer on high speed, beat until stiff peaks form. Serve with slices of pie.
