
KEY LIME CHEESECAKE



INGREDIENTS
- 1 7.2 ounce package key lime white chocolate cookies
- 1 8 ounce package cream cheese softened
- 1 14 ounce can sweetened condensed milk
- 2 egg yolks
- 1/3 cup key lime juice
- - whipping cream whipped
DIRECTIONS
Process cookies in a food processor until crumbles form (about 1 minute). Press into the bottom and up the sides of a 9-inch pie plate. Bake in a preheated 375°F oven 5 minutes. Cool. Reduce oven temperature to 300°F.
In large mixing bowl, using an electric mixer, whip cream cheese until light and fluffy. Add in condensed milk, eggs and lime juice. Continue mixing until well combined.
Pour mixture into cooled pie crust; spread evenly. Place back in 300°F oven and bake 20 minutes or until edges are set and center is still slightly wobbly.
Cool completely on cooling rack. Cover and refrigerate several hours.
Top with whipped cream, if desired.
