EARTHQUAKE CAKE

INGREDIENTS
  • 1/2 16 ounce container rich & creamy fudge frosting
  • 1/2 cup sweetened coconut flakes
  • 1/2 cup Chopped Pecans
  • 1 15.25 ounce package German chocolate cake mix
  • 1 1/4 cups cola soda
  • 1/2 cup pure vegetable oil
  • 3 large eggs
  • 2 cups powdered sugar
  • 1/2 8 ounce package cream cheese softened
  • 1/4 cup butter softened

DIRECTIONS

Spread frosting in the bottom of a greased and floured Bundt® pan. Sprinkle with coconut and pecans; set aside.

In large mixing bowl, combine cake mix, soda, oil and eggs. Using an electric mixer on medium speed, beat 2 minutes, scraping bowl occasionally. Pour into pan.

In medium mixing bowl, combine powdered sugar, cream cheese and butter. Using an electric mixer on medium speed, beat until creamy, light and fluffy (about 2 minutes), scraping bowl occasionally. Drop by spoonfuls over cake batter.

Bake in a preheated 350°F oven 50-55 minutes or until knife inserted into center comes out clean.

Remove from oven; let cool 10 minutes in pan. Flip cake over onto a serving platter; leave pan over cake for a few minutes to allow frosting to drop down.
