MUSHROOM, RED PEPPER & SAUSAGE OMELET

INGREDIENTS
  • 2 large eggs
  • 2 tablespoons milk
  • 1 teaspoon butter
  • - sautéed mushrooms, onions and red peppers
  • 2 breakfast sausage links cooked and sliced
  • 1/4 cup shredded mild Cheddar cheese

DIRECTIONS

In small bowl, whisk eggs and milk together.

In small skillet, melt butter over medium heat. Pour egg mixture into skillet. When egg mixture has set and no visible egg liquid remains, fill one half of omelet with sautéed vegetables and cooked sausage.

Top with cheese; fold omelet in half. Carefully slide omelet onto plate.

Garnish with additional shredded cheese, if desired.
