
EGG SCRAMBLER
with Feta & Apple Chicken Sausage



INGREDIENTS
- - cooking spray
- 3/4 pound fully cooked apple chicken sausage links sliced
- 1 8 ounce package sliced button mushrooms
- 2 cups fresh spinach leaves
- 1/2 cup chopped red bell peppers
- 2 1/2 cups Amazing Egg® substitute
- 1/2 cup Culinary Circle Crumbled Reduced Fat Feta Cheese
DIRECTIONS
Spray a large nonstick skillet with cooking spray; heat over medium-high heat. Add sausage; sauté 2-3 minutes.
Add mushrooms, spinach and peppers; salt and pepper to taste. Continue sautéing until peppers are softened and all liquid has evaporated.
Pour egg substitute into skillet. Allow eggs to begin setting; slowly pull spatula across egg mixture, allowing uncooked eggs to run under cooked eggs.
Stir in feta when eggs are about half done. Continue cooking and stirring, allowing eggs to set. Serve immediately.
