CREAMY SPINACH

with Baked Eggs

Serves : 4 servings

INGREDIENTS
  • 1 tablespoon butter
  • 1/4 cup minced onion
  • 1 teaspoon minced garlic
  • 1 5 ounce package fresh baby spinach leaves
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup heavy cream
  • 1 cup shredded Swiss cheese divided
  • 4 large eggs
  • 4 slices rustic Italian style artisan bread toasted, optional

DIRECTIONS

In large skillet, melt butter over medium heat. Add onions and garlic; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Add spinach and cayenne pepper; sauté until spinach is wilted and all liquid has evaporated. Stir in cream and ½ cup cheese; salt and pepper to taste. Cook until slightly thickened. Transfer to 4 (8 ounce) ramekins; place on baking sheet.

Break an egg into each ramekin. Bake in a preheated 425°F oven 10 minutes. Sprinkle with remaining ½ cup cheese. Continue baking 5-7 minutes or until cheese is melted and bubbly and eggs are cooked to desired doneness.

Serve with toasted bread, if desired.
