HOLIDAY MINT MOCHAS

Serves : about 10 (6 ounce) servings

INGREDIENTS
  • 1/2 cup organic French dark roast ground coffee
  • 4 cups water
  • 4 cups organic whole milk
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 1 10 ounce package organic rich chocolate hot cocoa mix
  • - peppermint starlights
  • - whipped cream
  • - chocolate shavings

DIRECTIONS

Brew coffee using 4 cups water. Meanwhile, place milk in a 3-quart saucepan over medium-low heat.

Cut vanilla bean in half lengthwise and scrape out seeds from center. Add seeds (or vanilla extract) to milk and whisk. Bring milk to a simmer, whisking frequently.

Add coffee and all 10 packs of cocoa mix to milk, whisking while adding. Bring to a simmer.

To serve, add one mint to a mug, ladle mocha over mint and top with whipped cream. Garnish with chocolate shavings and broken up mints, if desired.
