LEMON BLUEBERRY BREAD

INGREDIENTS
  • 1 18.25 ounce package blueberry muffin mix
  • 1/2 12 ounce can frozen lemonade concentrate thawed
  • 1/4 cup water
  • 3 tablespoons pure vegetable oil
  • 1 large egg

DIRECTIONS

Rinse and drain blueberries; set aside.

In medium mixing bowl, combine lemonade concentrate, water, oil and egg; mix with a fork. Add muffin mix; mix until just blended (batter will be lumpy). Gently fold in blueberries.

Transfer to a greased 9x5-inch loaf pan. Bake in a preheated 400°F oven 40-45 minutes or until knife inserted in center comes out clean.

Remove from oven; cool 15 minutes. Remove from pan and place on wire rack to cool completely.
