
CORN MUFFINS...BETTER FOR YOU



INGREDIENTS
- 1 1/4 cups all-purpose flour
- 3/4 cup yellow cornmeal
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cumin
- 1 8.5 ounce can no salt added whole kernel corn undrained
- 2 tablespoons diced green chiles
- 1/2 cup Amazing Egg® whites
- 1/2 cup skim milk
- 2 tablespoons extra light tasting olive oil
DIRECTIONS
In large bowl, combine flour, cornmeal, sugar, baking powder and cumin; set aside.
In food processor or blender; purée corn with liquid and green chiles. Add egg whites, milk and oil; process until just combined.
Add corn mixture to dry ingredients and mix until just combined. Divide among 1 (12 count) greased muffin pan.
Bake in a preheated 400°F oven 15 minutes. Remove muffins from pan and allow to cool slightly.
