
CRANBERRY GRANOLA COOKIES



INGREDIENTS
- 1/4 cup organic butter softened
- 1/4 cup organic original apple sauce
- 1 cup firmly packed organic light brown sugar
- 1 organic large brown egg
- 1/2 teaspoon pure vanilla extract
- 1 cup crushed crunchy vanilla almond granola
- 1 1/2 cups unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon organic ground Saigon cinnamon
- 1/4 teaspoon freshly ground natural sea salt
- 1/2 cup sweetened dried cranberries
DIRECTIONS
In large mixing bowl, combine butter, apple sauce, sugar, egg and vanilla. Beat with electric mixer until creamed, scraping bowl often.
Reduce mixer to low, slowly add crushed cereal, flour, baking soda, cinnamon and salt, mixing until well combined; scraping bowl often. Add in cranberries and mix until well combined.
Drop by teaspoonfuls on ungreased baking sheets. Bake in a preheated 350°F oven 12-15 minutes or until golden brown. Cool cookies on baking sheet 1 minute; remove to wire rack to cool completely.
