GLUTEN FREE FUDGE BROWNIES

INGREDIENTS
  • 1 cup gluten free all-purpose baking flour
  • 1 cup baking cocoa
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 cup butter melted
  • 2 teaspoons pure vanilla extract
  • 1/2 cup semi-sweet chocolate chips

DIRECTIONS

In medium bowl, sift together flour, cocoa, xanthan gum and salt; set aside.

In large mixing bowl, using an electric hand mixer, beat eggs until light and fluffy. Add sugar and vanilla; continue beating until well combined. With mixer running, slowly add in melted butter.

With mixer on low, slowly add flour; mix until just combined. Fold in chocolate chips.

Transfer to a greased 9x9-inch baking pan. Bake in a preheated 350°F for 45-50 minutes or until the center is set. Remove to cooling rack. Cut into 16 brownies.
