PEPPER CRUSTED SALMON TOASTS

INGREDIENTS
  • 1 cedar plank board soaked in water 30 minutes
  • 1 pound salmon fillets skin removed
  • 2 teaspoons 100% pure olive oil
  • 2 teaspoons coarsely cracked black pepper
  • 1/2 lemon
  • 12 slices rustic Italian style artisan bread [about 1 loaf]
  • - 100% extra virgin oil olive no-stick cooking spray
  • 1 6.5 ounce container spreadable herb & garlic cheese

DIRECTIONS

Prepare grill to medium heat. Pat salmon dry with clean paper towels. Rub both sides with olive oil and coat with black pepper. Remove cedar plank from water and place salmon on plank. Squeeze lemon juice over salmon.

Place plank on grill and cover. Cook until salmon flakes easily with a fork (about 25-30 minutes). Have a water bottle nearby to put out hot spots on plank while cooking. Remove from grill and allow salmon to cool.

Meanwhile, spray both sides of bread with cooking spray. Place on grill and cook until browned on both sides (about 1 minute).

Remove from grill and cool. Cut bread slices in half diagonally and spread with cheese. Flake salmon into pieces. Top cheese with salmon. Garnish with fresh dill sprigs, if desired.
