MOZZARELLA BRUSCHETTA

INGREDIENTS
  • 2 cups finely chopped tomatoes seeded
  • 1/2 teaspoon Italian seasoning
  • 2 cloves minced garlic
  • 3 tablespoons Culinary Circle Extra Virgin Olive Oil divided
  • 1 loaf French baguette bread sliced 1/2-inch thick
  • - salt
  • 2 cups fancy shredded mozzarella cheese

DIRECTIONS

In small mixing bowl, combine chopped tomatoes, Italian seasonings, garlic and 1 tablespoon olive oil; set aside.

Brush both sides of bread slices with remaining 2 tablespoons olive oil. Place on baking sheet. Sprinkle lightly with salt. Bake in a preheated 425°F oven 3 minutes. Turn slices over and continue baking 2 minutes. Remove from oven.

Spread each slice with a scant teaspoon tomato mixture. Sprinkle with cheese. Return to oven; continue baking 3 minutes or until cheese melts. Serve immediately.
