
MOJO CHIPOTLE BURGERS



INGREDIENTS
- 1 1/2 pounds lean ground beef
- 3/4 cup prepared Mojo citrus marinade divided
- 1/2-3/4 teaspoon chipotle chile pepper powder divided
- 6 deli style pepper jack cheese slices
- 2 cups coleslaw mix without dressing
- 1/4 cup light mayonnaise
- 12 slices Vienna bread
- - butter
DIRECTIONS
In medium bowl, combine ground beef ½ cup marinade and ¼-½ teaspoon chile powder; mix well. Shape into 6 patties.
Prepare grill to medium-high heat. Grill burgers 10 minutes, flipping once, or until internal temperature reaches 165°F. Top with cheese.
Meanwhile, in another medium bowl, combine coleslaw mix, mayonnaise, remaining ¼ cup marinade and remaining ¼ teaspoon chile powder. Toss to coat well.
Place burgers on bread, top with coleslaw and remaining bread. Butter both sides of bread. Place on skillet and cook over medium-high heat until golden brown on both sides.
