MOJO CHIPOTLE BURGERS

INGREDIENTS
  • 1 1/2 pounds lean ground beef
  • 3/4 cup prepared Mojo citrus marinade divided
  • 1/2-3/4 teaspoon chipotle chile pepper powder divided
  • 6 deli style pepper jack cheese slices
  • 2 cups coleslaw mix without dressing
  • 1/4 cup light mayonnaise
  • 12 slices Vienna bread
  • - butter

DIRECTIONS

In medium bowl, combine ground beef ½ cup marinade and ¼-½ teaspoon chile powder; mix well. Shape into 6 patties.

Prepare grill to medium-high heat. Grill burgers 10 minutes, flipping once, or until internal temperature reaches 165°F. Top with cheese.

Meanwhile, in another medium bowl, combine coleslaw mix, mayonnaise, remaining ¼ cup marinade and remaining ¼ teaspoon chile powder. Toss to coat well.

Place burgers on bread, top with coleslaw and remaining bread. Butter both sides of bread. Place on skillet and cook over medium-high heat until golden brown on both sides.
