PEPPER JACK BBQ SHRIMP

INGREDIENTS
  • 16 slices bacon
  • 16 jumbo uncooked shrimp peeled and deveined
  • 16 pieces (1/2 x 1/2 x 1 inch) pepper jack cheese
  • 1 cup hickory smoke barbecue sauce

DIRECTIONS

In large skillet over medium heat, cook bacon until partially done. Remove from skillet and place on paper towels. Set aside to cool.

Butterfly shrimp by cutting along the outer curve from the tail forward. Make repeated shallow cuts and spread the meat apart as you go, leaving just enough meat intact to keep the two sides connected.

Place slices of cheese inside butterflied shrimp and close. Wrap shrimp with cooled bacon.

Place bacon wrapped shrimp on a broiler pan and brush with BBQ sauce. Broil on HIGH 4-5 minutes. Turn shrimp over and brush with BBQ sauce. Continue broiling 4-5 minutes or until shrimp is opaque and cooked through.
