MASHED POTATOES

with Bacon & Green Onions

INGREDIENTS
  • 2 pounds russet potatoes peeled, cut into 1-inch cubes
  • 4 garlic cloves peeled
  • 8 slices bacon cut into 1/2-inch pieces
  • 1/4 cup sliced green onions
  • 1//2 cup 1% milk
  • 1/2 cup light sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

DIRECTIONS

In large saucepan, combine potatoes and garlic; cover with water. Lightly salt water, if desired. Bring to a boil; reduce heat to simmer. Cook potatoes until tender (about 20 minutes); drain.

In medium skillet, sauté bacon over medium-high heat until crisp; drain, reserving 1 teaspoon bacon drippings. Set bacon aside.

Add green onions to skillet with reserved bacon drippings; sauté for 1 minute or until soft. Mash potatoes with milk, sour cream, salt and pepper. Stir in green onions and bacon.
