
ITALIAN PASTA SOUP



INGREDIENTS
- 2 tablespoons 100% pure olive oil
- 1 cup chopped onion
- 2 tablespoons chopped garlic
- 1 7.5 ounce package classic Italian style pasta salad mix
- 1 14.5 ounce can diced tomatoes with garlic & onion undrained
- 1 15 ounce can tomato sauce
- 2 cups reduced sodium chicken broth
- 1 cup pepperoni slices quartered
- - shredded mozzarella cheese
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium heat. Add onions and garlic; sauté until golden brown (about 6-8 minutes). Stir in pasta seasoning packet; sauté 1 minute.
Add tomatoes, tomato sauce, chicken broth and pepperoni; salt and pepper to taste.
Bring to a boil; add pasta reduce heat and simmer 12-13 minutes, stirring occasionally, or until pasta is tender. Top with mozzarella cheese, if desired.
