INDIAN VEGETABLE FRIED RICE

INGREDIENTS
  • 2 1/2 tablespoons organic extra virgin olive oil
  • 1 cup thinly sliced onions
  • 3 tablespoons minced garlic
  • 1/8 teaspoon organic ground Saigon cinnamon
  • 1/8 teaspoon organic ground cloves
  • 3/4 cup chopped organic whole carrots
  • 3/4 cup organic frozen green peas
  • 1/2 cup cashew halves & pieces
  • 1 cup organic Indian basmati white rice
  • 2 1/3 cups water
  • 1 teaspoon freshly ground natural sea salt

DIRECTIONS

In medium saucepan, heat oil over medium heat. Add onions and sauté 1 minute. Stir in garlic, cinnamon and cloves; add carrots, peas and cashews. Sauté 5 minutes.

Rinse and drain rice according to package directions. Add rice to saucepan; sauté for 2 minutes.

Add water and salt; bring to a boil. Reduce heat; cover and simmer 25 minutes.

Remove lid and gently stir; continue cooking for 5 minutes.
