
INDIAN VEGETABLE FRIED RICE



INGREDIENTS
- 2 1/2 tablespoons organic extra virgin olive oil
- 1 cup thinly sliced onions
- 3 tablespoons minced garlic
- 1/8 teaspoon organic ground Saigon cinnamon
- 1/8 teaspoon organic ground cloves
- 3/4 cup chopped organic whole carrots
- 3/4 cup organic frozen green peas
- 1/2 cup cashew halves & pieces
- 1 cup organic Indian basmati white rice
- 2 1/3 cups water
- 1 teaspoon freshly ground natural sea salt
DIRECTIONS
In medium saucepan, heat oil over medium heat. Add onions and sauté 1 minute. Stir in garlic, cinnamon and cloves; add carrots, peas and cashews. Sauté 5 minutes.
Rinse and drain rice according to package directions. Add rice to saucepan; sauté for 2 minutes.
Add water and salt; bring to a boil. Reduce heat; cover and simmer 25 minutes.
Remove lid and gently stir; continue cooking for 5 minutes.
