CARAMELIZED ONION, CHICKEN & GORGONZOLA PASTA

INGREDIENTS
  • 1/2 12 ounce package organic penne pasta
  • 2 tablespoons organic extra virgin olive oil
  • 1 small red onion halved, sliced (about 1 cup)
  • 1 pound boneless, skinless chicken breasts sliced
  • 1 tablespoon chopped garlic
  • 1/2 cup organic half & half
  • 4 ounces gorgonzola cheese crumbles
  • 1/2 cup chopped walnuts toasted

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat oil over medium heat. Add onions and sauté until golden (about 8-10 minutes).

Add chicken and garlic; sauté until cooked through (about 5-7 minutes). Salt and pepper to taste.

Stir in half & half, gorgonzola cheese and pasta. Toss to coat; heat through. Stir in walnuts; serve.
