
PASTA PRIMAVERA
with Sautéed Vegetables & Beans



INGREDIENTS
- 1 4.8 ounce package angel hair aasta with herbs & sauce
- 1 tablespoon 100% pure olive oil
- 1 cup sliced mushrooms
- 1/2 cup chopped fresh broccoli
- 1/3 cup chopped yellow bell pepper
- 1/3 cup chopped red bell pepper
- 1 tablespoon chopped garlic
- 1 cup pinto beans rinsed and drained
- 2 cups fresh baby spinach leaves
DIRECTIONS
Prepare pasta according to package directions.
Meanwhile, in large skillet heat oil over medium-high heat. Add mushrooms, broccoli, peppers and garlic; salt and pepper to taste. Sauté until vegetables are tender (about 5 minutes).
Stir in beans and spinach; continue sautéing until beans are heated through and spinach has wilted. Stir into prepared pasta.
