LINGUINE

with Spicy Olive Pesto

INGREDIENTS
  • 1/2 16 ounce package linguine
  • 1 6 ounce can large pitted ripe olives drained
  • 1 cup chopped fresh parsley
  • 1 cup fancy shredded Italian style Parmesan cheese
  • 2 tablespoons 100% pure olive oil
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon crushed red pepper optional
  • 1 cup grape tomatoes halved
  • 1/2 cup walnut halves & pieces toasted

DIRECTIONS

Prepare pasta according to package directions. Drain.

Meanwhile, in food processor or blender combine olives, parsley, cheese, olive oil, garlic and pepper flakes; process until paste forms.

Toss cooked pasta with pesto, tomatoes and walnuts; salt and pepper to taste.
