CREAMY TORTELLINI

with Roasted Vegetables

INGREDIENTS
  • 1 cup fresh green beans
  • 1 cup 1/2-inch strips green and/or red bell peppers
  • 1 cup sliced zucchini
  • 1/2 cup chopped onion
  • 2 tablespoons 100% pure olive oil
  • 1 19 ounce package frozen cheese tortellini
  • 1 cup fancy shredded Italian style Parmesan cheese
  • 1/2 cup light cream

DIRECTIONS

On large baking sheet, combine green beans, peppers, zucchini and onion. Toss with oil; salt and pepper to taste. Bake in a preheated 400°F oven 15-20 minutes or until tender.

Meanwhile, prepare pasta according to package directions; drain and return to pan.

Stir in vegetables, cheese and cream. Cook over medium-low heat until heated through (about 5 minutes); stirring frequently.
