
CREAMY SNOW CRAB
over Linguine



INGREDIENTS
- 4 ounces linguine
- 1 1/2 tablespoons butter
- 1 tablespoon chopped shallots
- 2 teaspoons minced garlic
- 1/2 cup sliced button mushrooms
- 1 tablespoon all-purpose flour
- 1/2 cup reduced sodium chicken broth
- 1/2 cup 2% milk
- 2 ounces cream cheese softened, cubed
- 1/4 cup frozen green peas
- 1 1/2 pounds frozen snow crab clusters thawed, meat removed
DIRECTIONS
Prepare pasta according to package directions; drain.
Meanwhile, in a large skillet, heat butter over medium-high heat. Stir in shallots and garlic; sauté 2-3 minutes. Add in mushrooms; sauté until softened.
Stir in flour; cook 1 minute. Slowly add in chicken broth and milk; bring to a boil. Reduce heat and simmer until slightly thickened. Stir in cream cheese and peas; salt and pepper to taste; continue stirring until cheese is melted.
Remove from heat and gently fold in crabmeat. Serve over pasta.
