THAI SHRIMP PASTA

INGREDIENTS
  • 1/2 16 ounce package linguine
  • 1 tablespoon pure vegetable oil
  • 3/4 cup matchstick carrots
  • 2 3.5 ounce packages shiitake mushrooms stems removed, sliced
  • 4 green onions sliced
  • 1 pound frozen 31-40 count EZ peel uncooked shrimp thawed, peeled and deveined
  • 3/4 cup bottled Thai peanut sauce

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, heat a large skillet over medium-high heat. Add vegetable oil; when hot add carrots and sauté 3 minutes. Add mushrooms and continue sautéing until softened.

Add shrimp and green onions; continue sautéing until shrimp are opaque and cooked through (about 6-8 minutes).

Stir in sauce and bring to a boil; remove from heat. Toss with pasta.
