
LEMON PEPPER FISH BITES



INGREDIENTS
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- 1 sleeve roasted vegetable snacker crackers
- 1/2 cup Culinary Circle Grated Parmesan Cheese
- 1 tablespoon lemon & pepper seasoning
- 1 1/2 pounds cod fillets cut into 2-inch chunks
- - pure vegetable oil (for frying)
- - tartar sauce optional
DIRECTIONS
Place flour in a shallow dish; salt and pepper taste. Place beaten eggs in second shallow dish. In third shallow dish, combine crushed crackers, Parmesan and lemon pepper seasoning.
Dust fish chunks in flour, coat in egg and then cracker mixture. Set aside.
In large saucepan or Dutch oven, add oil until 1/3 full; heat over medium heat until deep-fry thermometer reaches 300°F. Add fish in batches (do not over crowd); fry 5 minutes or until golden brown and cooked through, turning occasionally.
Remove from oil with slotted spoon and drain. Serve with tartar sauce, if desired.
