POTATO CHIP COOKIES

INGREDIENTS
  • 1/2 cup butter softened
  • 1/2 cup all vegetable shortening
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups crushed classic potato chips
  • 1 cup semi-sweet chocolate chips

DIRECTIONS

In large mixing bowl, combine butter, shortening and sugar; using an electric mixer on medium speed, beat until creamed, scraping bowl often. Add in eggs and vanilla; continue mixing until well combined, scraping bowl often.

Reduce mixer to low; slowly add flour and baking soda until well combined, scraping bowl often.

Stir in potato chips and chocolate chips. Drop dough by teaspoonfuls onto ungreased baking sheets.

Bake in a preheated 350°F oven 10-12 minutes or until lightly brown around the edges. Cool on baking sheet 2 minutes; remove to wire rack to cool completely.
