PEANUT BUTTER & JELLY BARS

INGREDIENTS
  • 2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup firmly packed light brown sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup creamy peanut butter
  • 1/2 cup cold butter cut into pieces
  • 1 cup concord grape jelly
  • 1 cup chopped party peanuts

DIRECTIONS

In food processor or blender, combine flour, oats, sugar, baking powder and salt. Add peanut butter and cold butter; pulse until mixture resembles coarse crumbs.

Reserve 1½ cups crumb mixture. Press remaining mixture into bottom of a greased 13x9-inch baking dish. Spread with jelly. Stir chopped peanuts into reserved crumb mixture; sprinkle over jelly.

Bake in a preheated 375°F oven 20 minutes or until lightly browned. Cool completely.
