
OATMEAL RAISIN COOKIES



INGREDIENTS
- 1 cup raisins
- 1/2 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 1/4 cup butter softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1/2 teaspoon salt
- 2 3/4 cups old fashioned oats
DIRECTIONS
Place raisins in colander and place in a pan of warm water. Let soak while preparing the dough.
In large mixing bowl, combine sugar, butter, eggs and vanilla. Beat with electric mixer until creamed, scraping bowl.
Reduce mixer to low; slowly add flour, baking soda, baking powder, cinnamon nutmeg, allspice and salt, mixing until well combined; scraping bowl. Stir in oats and raisins.
Drop by teaspoonfuls onto ungreased cookie sheets.
Bake in a preheated 350°F oven 5-8 minutes or until golden brown. Let stand on baking sheet 1 minute; transfer to a cooling rack.
