
CRANBERRY PORK CHOPS



INGREDIENTS
- 2 tablespoons all-purpose flour
- 2 large eggs beaten
- 1 1/2 cups crispy Panko style plain bread crumbs
- 4 (4 ounce) boneless center cut pork chops
- 1 cup whole cranberry sauce
- 1/4 cup orange juice
- 1/4 cup sweetened dried cranberries
DIRECTIONS
Place flour in a shallow dish, eggs in second shallow dish, and bread crumbs in a third shallow dish.
Season pork chops with salt and pepper to taste. Dust with flour, dip in egg and coat with bread crumbs.
Place on a greased baking sheet. Bake in a preheated 375°F oven 25 minutes or until pork reaches an internal temperature of 155°F on an instant read thermometer.
Meanwhile, in medium saucepan, combine cranberry sauce, orange juice and dried cranberries. Cook over medium-high heat until sauce reduces by half, stirring frequently. Serve over pork chops.
