FIESTA TACO SALAD

INGREDIENTS
  • 1/2 pound lean ground beef
  • 1 15 ounce can spicy chili beans undrained
  • 1 15 ounce can black beans rinsed and drained
  • 1 1.25 ounce packet taco seasoning mix
  • 1 cup thick and chunky salsa divided
  • 1/4 cup creamy ranch dressing
  • 1 head iceberg lettuce chopped
  • 1 1/2 cups shredded colby jack cheese
  • 1 cup chopped tomatoes
  • 1/2 cup sliced ripe olives
  • - tortilla chips broken

DIRECTIONS

In large skillet over medium-high heat, cook and crumbled beef until no longer pink; drain.

Stir in chili beans, black beans, taco seasoning and ½ cup salsa; reduce heat and simmer 3-5 minutes or until heated through.

Meanwhile, in large bowl combine dressing and remaining salsa. Add lettuce, cheese, tomatoes and olives; toss until well combined.

Divide among 6 dinner plates; top with beef mixture and tortilla chips.
